Fresh and colorful side dish for any picnic lunch! Of course, I recommend fresh, local, organic produce, if at all possible! Yum!<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>\u00bd c. mayonnaise (I used Smart Balance)<\/li>\n<li>2-3 Tbsp. sugar<\/li>\n<li>1 Tbsp. apple cider vinegar<\/li>\n<li>1 tsp. Dijon (or spicy brown mustard)<\/li>\n<li>1 tsp. Dried Tarragon<\/li>\n<li>1 tsp. Dried Dill<\/li>\n<li>Pinch of Herb de Provence, optional<\/li>\n<li>2 small heads of Broccoli, chopped into bite size pieces (florets only)<\/li>\n<li>2 Tbsp. finely chopped Shallot (1-2 small)<\/li>\n<li>2 Tbsp. finely chopped Red Bell Pepper (1\/4 or less of a pepper)<\/li>\n<li>\u00bc c. Dried Currants (could use raisins if currants are unavailable)<\/li>\n<li>\u00bc c. Sliced Almonds<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<ul>\n<li>Whisk together mayo, sugar, vinegar, mustard, and herbs.<\/li>\n<li>Chop vegetables.<\/li>\n<li>Add currants and almonds and gently toss with dressing (A few pieces of crumbled bacon would be a nice touch in this as well).<\/li>\n<li>Chill and serve.<\/li>\n<\/ul>\n<p>Bon Appetit!<\/p>\n<p>~Melissa<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Perfect combo of tangy, crunchy and sweet!
